Across the surface of the ocean not even ripple appeared near our boat. We sat waiting for a sign. We watched he horizon and we stared down into the clear warm water waiting.  Our patience would eventually pay off but these moments before we were rewarded, the silence of an early morning on the ocean off the coast of the Yucatan Peninsula felt like our initial goal. Nature was showing off in the most subtle way possible. Lake like conditions on the open ocean, miles away from land, a serene sight was bestowed upon us.

Three renowned cooking legends, including Jerome Bocuse, Thomas Keller and Daniel Boulud, are mentoring young chefs with their unique organization called Ment'or Organization. Bocuse d'Or, created by Paul Bocuse in 1987, is the culinary equivalent to the Olympics. The world championship held every other year in Lyon, France, calls upon chefs to represent their countries by preparing elaborate presentations that include one of meat and one fish dish that are beyond amazing. “For me, I wanted to get involved in this mentoring opportunity for chefs, because it is part of my heritage, part of my family and a legacy that I hope endures from a personal perspective and for chefs all around the world,” Paul’s son, Jérôme, explains.

What You Should Do in 2017

I don’t really like the idea of resolutions. I don’t need anyone to tell me what I will be doing just because the calendar ran out and I have to start writing 2017 on everything. Also, I don’t like to stick to anything that might prohibit me from enjoying the things in life that I love, mainly food, wine and travel. Instead, I make a list of a few things that I figure I should get to. Things that would be fun to have on a list to make sure I checked off before the next opportunity to look back at all of the items I ignored.
 
In a year from now, maybe I will not have accomplished all of this, however, it’s possible that my journey may have helped me find a few more things to do next year.
